Europe: Capercaille and White tailed eagle (ideally in the UK)
Asia: Lammergeir and Indian Skimmer
Africa: Shoebill Harpy eagle
North America: Not too sure as I don't really know the north american birds, but I'll go with Bald eagle and roadrunner for starters
South America: Some sort of toucan and hyacinth macaw
Australasia/Oceania: Lyrebird, bowerbird sp. at its bower and any of the birds of paradise.
Antarctica: Emperor Penguin and Chinstrap Penguin


Mammals

Europe: iberian lynx (or eurasian lynx) Wolverine Grey wolf
Asia: Tiger, Leopard and Snow Leopard
Africa: Leopard & African Hunting dog

I will stick to some simple aims.
The two UK birds I would most like to see are:
Water Rail, Rallus aquaticus
Tree Sparrow, Passer montanus
I've seen Tree Sparrows in the East but I don't treat my worldwide list as seriously as the domestic one.

Come to Texas sometime, the western half is full of roadrunners, and you might find Bald Eagles on the big lakes in the winter.
 
North America: Western Spindalis for spite (check my avatar!). Sabines and Ross's Gulla re awesome creatures, and I'd love to see them on their breeding territory. As for mammals, Pronghorn would be nice, as would the larger whales.
Central/South America: Violet-tailed Sylph. That is one gorgeous piece of hummingbird!. All those awesome accipiterids, Ant-things and the like tie for second. The mysterious Jaguarundi is on the wishlist, as is Ocelot. Ooh, ooh, and monkeys!
Europe: I'd love to see the any of those challenging warblers (and the easier ones).
Asia: Don't know many, but Whiskered Tree-Swift is a must. Elephant-back ride through rhinoceras and tiger country would be beyond amazing.
Africa: Lilac-breasted Roller, and all the rest, along with the excellent mammal variety. Giraffes and servals would be great.
Australia: So many incredible birds there! Don't know enough on appearance to choose (read the Big Twitch). Platypus and other marsupials as well as whales are on the wishlist for the region. A lack of the posionous ones would be fine too.
Antartica: Any penguin would be great, and those mysterious sheathbills.

North America: Great Gray Owl and Greater Prairie Chicken.

South America: Marvelous Spatuletail and Seven-colored Tanager.

Europe: Great Bustard and Wallcreeper.

Africa: Gray-necked Picathartes and Pennant-winged Nightjar.

Asia: Philippine Eagle and Siberian Crane.

Australia/Oceania: King of Saxony Bird of Paradise and Emperor Penguin.

I feel guilty for not shoehorning a parrot into this list, but how do you leave South America without a hummingbird or a tanager?
 
well, I only know south america...

Birds: Spangled Cotinga and Bare-throated Bellbird (until a couple montns ago I'd put the Common Potoo in the list, but I've recently seen it... probably the nicest bird I've ever seen)

Mammals: Bush Dog and Jaguar

South America: Pale-faced Antbird, Ocellated Crake (hopefully I'll get both later this year!)

Top mammals are Snow Leopard and Silky Anteater.
