I know from birds every continent but and would say I know a lot of birds but not almost every bird plus I gen up birds when visiting a new country,city, county etc.
This really depends on what you mean by 'know'...for example with adult gulls in Western Europe I would say I am confident and competent at ID, but I struggle with some of the immature plumages. There is always more to learn, even with birds you are familiar with on a day to day basis.
